A light, festive trifle featuring layers of airy angel food cake, whipped cream, and fresh berries, perfect for summer parties and easy to prepare in under 30 minutes.

Ingredients

Scale
  • 10 ounces angel food cake, cut into 1-inch cubes
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries, rinsed and patted dry
  • 1 cup fresh raspberries, gently rinsed
  • 1 ½ cups heavy whipping cream, chilled
  • ¼ cup powdered sugar, sifted
  • 1 teaspoon vanilla extract, pure
  • Optional: 1 teaspoon lemon zest
  • Optional: 2 tablespoons berry liqueur or orange juice for soaking cake cubes
  • Optional: fresh mint leaves for garnish

Instructions

  1. Chill mixing bowl and beaters for about 10 minutes before whipping.
  2. Pour heavy whipping cream into chilled bowl and whip on medium speed.
  3. Gradually add powdered sugar and vanilla extract once cream starts to thicken.
  4. Continue whipping until soft peaks form, being careful not to overwhip.
  5. Cut angel food cake into 1-inch cubes using a serrated knife.
  6. Optionally drizzle cake cubes with berry liqueur or orange juice.
  7. Rinse strawberries, blueberries, and raspberries gently under cold water.
  8. Hull and slice strawberries; pat all berries dry with paper towel.
  9. In a clear serving bowl, layer angel food cake cubes evenly on the bottom.
  10. Add about one-third of the whipped cream over the cake layer.
  11. Sprinkle a mixture of the berries on top of the whipped cream.
  12. Repeat layering cake, whipped cream, and berries two more times.
  13. Finish with a generous layer of whipped cream on top.
  14. Garnish with whole berries and fresh mint leaves.
  15. Cover the trifle with plastic wrap and refrigerate for at least 1 hour, ideally 2 hours.
  16. Before serving, if whipped cream softens, whisk briefly to revive texture.

Notes

Chill bowl and beaters before whipping cream for best results. Avoid overwhipping cream to prevent graininess. Pat berries dry to avoid watery layers. Assemble no more than 4 hours before serving for best texture. For dairy-free, substitute heavy cream with chilled coconut cream and use dairy-free cake. Frozen berries can be used if thawed and drained well.
