  • 1/2 cup smooth or crunchy peanut butter (natural, no added sugar or salt)
  • 1 tablespoon honey (optional)
  • 1/2 teaspoon cinnamon (optional)
  • 2 tablespoons chopped nuts or seeds (optional, e.g., crushed pecans or sunflower seeds)
  • 1 teaspoon lemon juice

Instructions

  1. Wash and slice the apples into 1/4-inch (6 mm) thick rounds using a sharp knife or apple slicer.
  2. Toss the apple slices gently in a bowl with 1 teaspoon of lemon juice to prevent browning. Set aside.
  3. In a small bowl, mix 1/2 cup peanut butter with 1 tablespoon honey and 1/2 teaspoon cinnamon if using.
  4. Spread about 1 tablespoon of the peanut butter mixture on one apple slice.
  5. If desired, sprinkle 1 teaspoon of chopped nuts or seeds on top of the peanut butter.
  6. Place another apple slice on top to form a sandwich.
  7. Repeat assembling sandwiches until apple slices or peanut butter are used up, making roughly 12-16 mini sandwiches.
  8. Pack sandwiches in an airtight container or wrap individually in parchment paper for easy transport.
