These easy protein granola bars with chocolate drizzle are quick to make, packed with protein and perfect for soccer snacks. They combine chewy oats, crunchy nuts, and a smooth chocolate drizzle for a delicious and energizing treat.

  • 2 cups (180 g) rolled oats
  • 1 cup (250 g) peanut butter, smooth or crunchy
  • ½ cup (170 g) honey
  • 1 tsp vanilla extract
  • ½ cup (50 g) protein powder, vanilla or unflavored
  • ½ cup (60 g) chopped nuts (almonds or walnuts)
  • ½ cup (90 g) mini dark chocolate chips
  • ¼ tsp sea salt
  • 3 oz (85 g) dark chocolate, for drizzle

Instructions

  1. Preheat oven to 350°F (175°C). Spread rolled oats and chopped nuts on a baking sheet and toast for 8-10 minutes until golden and fragrant, stirring halfway through.
  2. In a mixing bowl, combine peanut butter, honey, and vanilla extract. Stir until smooth. Microwave peanut butter for 10 seconds if stiff.
  3. Add toasted oats, nuts, protein powder, mini chocolate chips, and sea salt to the wet mixture. Stir gently until evenly coated and sticky.
  4. Line an 8×8-inch baking pan with parchment paper. Transfer mixture into the pan and press firmly to create an even, compact layer.
  5. Chill the bars in the refrigerator for at least 1 hour to set.
  6. Melt dark chocolate in a microwave-safe bowl or double boiler until smooth. Let cool slightly but remain pourable.
  7. Drizzle melted chocolate over the chilled bars in thin, even lines. Return to fridge for 10 minutes to harden the drizzle.
  8. Lift bars out using parchment paper edges and cut into 12-16 bars. Store in an airtight container in the refrigerator.

Notes

Toast oats and nuts for extra flavor and crunch. Use room temperature peanut butter for easier mixing. Press mixture firmly to prevent crumbling. Chill bars thoroughly before cutting. Melt chocolate slowly to avoid burning. Add a teaspoon of water or extra honey if mixture is too loose. Use a sharp knife wiped clean between cuts for neat bars.
