A quick and easy pumpkin dump cake with a moist pumpkin base and a crunchy pecan topping, perfect for cozy fall desserts and last-minute gatherings.

Ingredients

Scale
  • 15 oz canned pumpkin (pure pumpkin, not pumpkin pie filling)
  • 1 box (15.25 oz) yellow cake mix
  • 1 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 2 large eggs (room temperature)
  • 1/2 cup vegetable oil (canola or sunflower)
  • 1 tsp vanilla extract
  • 1 cup chopped pecans (fresh or toasted)
  • 1/4 cup brown sugar
  • 4 tbsp unsalted butter (melted)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish lightly with butter or nonstick spray.
  2. In a large bowl, combine canned pumpkin, granulated sugar, eggs, vegetable oil, vanilla extract, cinnamon, nutmeg, and salt. Whisk gently until just combined; the batter will be thick and smooth.
  3. Spread the pumpkin mixture evenly into the prepared baking dish and level the top with a spatula.
  4. Sprinkle the dry cake mix evenly over the pumpkin layer without stirring.
  5. In a small bowl, mix chopped pecans, brown sugar, and melted butter until the nuts are evenly coated.
  6. Scatter the pecan topping evenly over the cake mix.
  7. Bake uncovered for 40-45 minutes, or until the topping is golden brown and the pumpkin layer is set. Test doneness with a toothpick; it should come out mostly clean but moist.
  8. Cool at least 15 minutes before serving to allow the layers to set.

Notes

Do not stir the cake mix into the pumpkin layer to maintain the signature dump cake texture. Use room temperature eggs for better moisture and structure. Melted butter in the pecan topping is essential for a caramelized crunch. Tent with foil if topping browns too quickly. Let cake cool before slicing for cleaner cuts. For gluten-free or dairy-free options, use appropriate cake mixes and substitute butter with coconut oil.
