Easy Rainbow Fruit Kabobs: Best After-School Snack

These easy rainbow fruit kabobs are a quick, healthy, and fun after-school snack that kids love to help make. With fresh fruit threaded on skewers in rainbow order, they turn snack time into a colorful activity.

Ingredients

  • Red fruit: strawberries (hulled and halved if large), raspberries, or watermelon cubes
  • Orange fruit: mandarin orange segments (canned in juice, drained), cantaloupe cubes, or mango chunks
  • Yellow fruit: pineapple chunks (fresh or canned in juice), banana slices (dip in lemon juice to prevent browning), or yellow bell pepper strips
  • Green fruit: green grapes, honeydew melon cubes, kiwi slices (peeled and quartered), or Granny Smith apple chunks (toss in lemon water)
  • Blue/purple fruit: blueberries, blackberries, or purple grapes
  • Short wooden skewers (6 inches) or reusable metal skewers with blunt ends

Instructions

  1. Wash all the fruit thoroughly. Fill a large bowl with cool water and a splash of white vinegar, let the fruit soak for a few minutes, then rinse clean. Pat everything dry with paper towels.
  2. Prep each color group separately. Hull the strawberries and cut them in half (or quarters if they’re huge). Peel and slice the kiwis into rounds, then quarter each round. Cut the pineapple into bite-sized chunks. Separate the mandarin segments. Leave the grapes and blueberries whole. If using banana, slice it into rounds and toss with a little lemon juice.
  3. Arrange your fruit in color order. Set out small bowls in rainbow order: red, orange, yellow, green, blue/purple.
  4. Start skewering. Take a skewer and thread the fruit in rainbow order: red first, then orange, yellow, green, and blue/purple on the end. Leave about half an inch of empty space at the bottom of the skewer.
  5. Repeat until all fruit is used. Don’t overcrowd the skewers—leave a tiny gap between pieces.
  6. Serve immediately or refrigerate. Cover the kabobs loosely with plastic wrap and store in the fridge. Add a squeeze of lemon juice to any fruit that browns easily.

Notes

Choose fruit that’s ripe but firm. Cut uniform pieces about 1 inch in diameter. Pat fruit dry before skewering to prevent slipping. Always leave a handle at the bottom of the skewer. Make it a family activity for more fun. Buy extra skewers as you may need more than expected.
