  • 3 medium bell peppers (red, yellow, and green), sliced into thin strips

  • 1 tablespoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and black pepper to taste
  • Juice of 1 fresh lime (optional but recommended)

  • Flour or corn tortillas, warmed, for serving

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the chicken breasts into roughly 1/2-inch thick strips.
  3. Cut the bell peppers and onion into thin strips, about the same size as the chicken.
  4. In a large mixing bowl, combine olive oil, garlic powder, smoked paprika, cumin, chili powder, salt, and black pepper. Whisk until well blended.
  5. Add the chicken and sliced veggies to the bowl and toss gently but thoroughly to coat evenly with the spice mixture.
  6. Line a rimmed sheet pan with parchment paper or foil.
  7. Spread the chicken and veggies out in a single layer on the sheet pan, avoiding overcrowding.
  8. Bake in the preheated oven for 20-25 minutes, flipping or stirring halfway through around the 12-minute mark, until chicken reaches an internal temperature of 165°F and is nicely browned.
  9. Remove from oven and squeeze fresh lime juice over the chicken and veggies.
  10. Garnish with chopped fresh cilantro if desired and serve immediately with warmed tortillas and your favorite toppings.
