stove top stuffing meatloaf - featured image

This easy meatloaf recipe uses just four simple ingredients—ground beef, Stove Top stuffing mix, eggs, and water—for a moist, flavorful loaf that comes together quickly and delivers classic comfort food with minimal effort.

Ingredients

Scale
  • 2 lbs ground beef (80/20 recommended)
  • 1 box (6 oz) Stove Top stuffing mix (savory herb, chicken, or cornbread flavor)
  • 2 large eggs
  • 1 cup water (or low-sodium beef broth or milk)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan or line with parchment paper.
  3. In a large mixing bowl, add stuffing mix and pour in water. Let sit for 2-3 minutes until stuffing absorbs liquid.
  4. Add eggs and whisk gently into the stuffing mixture.
  5. Add ground beef and mix until just combined. Do not overmix.
  6. Transfer mixture to prepared pan and smooth the top.
  7. Bake for 55-65 minutes, or until the center reaches 160°F (71°C) and the top is golden.
  8. Remove from oven and let rest for at least 10 minutes before slicing.
  9. Slice and serve hot. For firmer slices, let cool an additional 5 minutes.

Notes

For extra flavor, brush the top with ketchup or barbecue sauce before baking. If using ground turkey or chicken, add 1 tablespoon olive oil for moisture. Gluten-free stuffing mix can be substituted for a gluten-free version. Letting the meatloaf rest after baking helps it hold together and keeps it juicy. Leftovers are great for sandwiches and freeze well.
