Instructions

  1. Brown the Butter (about 5-7 mins): In a medium saucepan over medium heat, melt the butter. Stir frequently until it foams, turns golden with brown specks, and smells nutty. Remove from heat and let cool for 5 minutes.
  2. Mix Wet Ingredients (5 mins): In a large bowl, whisk together the browned butter, brown sugar, granulated sugar, and pumpkin puree until smooth. Add the egg and vanilla extract, whisking until fully combined.
  3. Combine Dry Ingredients (3 mins): In another bowl, sift together the flour, baking soda, cinnamon, nutmeg, and salt.
  4. Incorporate Dry to Wet (3-5 mins): Gradually fold the dry ingredients into the wet mixture using a spatula or mixer on low speed. Mix gently until just combined.
