A creamy, spicy buffalo chicken dip balanced with tangy blue cheese crumbles, perfect for game day or casual get-togethers. Ready in under 30 minutes, this crowd-pleaser combines simple ingredients for a rich and satisfying dip.

Ingredients

Scale
  • 2 cups shredded cooked chicken (about 10 oz / 280 g), rotisserie chicken recommended
  • 8 oz cream cheese, softened
  • ½ cup buffalo wing sauce (120 ml), such as Frank’s RedHot
  • ½ cup blue cheese crumbles (75 g), preferably Maytag or similar
  • ½ cup ranch dressing (120 ml)
  • 1 cup shredded sharp cheddar cheese (100 g)
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and freshly ground black pepper to taste
  • Optional garnish: chopped fresh chives or green onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Soften the cream cheese by leaving it at room temperature for 30 minutes or microwaving in 10-second bursts until soft but not melted.
  3. In a mixing bowl, beat the softened cream cheese until smooth and creamy using a hand mixer or whisk, about 2-3 minutes.
  4. Add buffalo wing sauce, ranch dressing, garlic powder, onion powder, salt, and pepper. Mix well until fully combined and uniform in color, about 1-2 minutes.
  5. Fold in shredded chicken and blue cheese crumbles gently to distribute evenly while keeping some texture. Taste and adjust seasoning if needed.
  6. Transfer the mixture to an oven-safe baking dish and spread evenly.
  7. Sprinkle shredded cheddar cheese on top in an even layer.
  8. Bake in the preheated oven for 20-25 minutes until edges bubble and cheese is golden.
  9. Remove from oven and let cool for 5 minutes to thicken slightly.
  10. Optional: garnish with chopped chives or green onions.
  11. Serve warm with tortilla chips, celery sticks, or preferred dippers.

Notes

Use room temperature cream cheese for smooth texture. Avoid overbaking to prevent drying out. Shred chicken finely for easier scooping. Tent with foil if edges brown too fast. Can be made ahead and refrigerated, then baked before serving. Substitute ranch with blue cheese dressing for stronger cheese flavor. For dairy-free, use dairy-free cream cheese and ranch alternatives.
