  • 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup bell peppers, sliced
  • 1 cup zucchini, sliced
  • 1 cup cherry tomatoes
  • 1 cup broccoli florets
  • 1/2 cup low-sodium chicken broth
  • 1 tsp dried Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, optional for garnish

Instructions

  1. Cut the chicken into bite-sized pieces and season with salt, pepper, and half the Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes, flipping occasionally, until golden brown and cooked through. Remove the chicken and set aside.
  3. Lower the heat to medium and sauté the minced garlic for 30 seconds, stirring constantly to prevent burning.
  4. Add the bell peppers, zucchini, broccoli, and cherry tomatoes to the skillet. Sprinkle with the remaining Italian seasoning. Stir and cook for 8-10 minutes, or until the vegetables are crisp-tender.
  5. Pour in the chicken broth and scrape the bottom of the skillet to release any flavorful bits. Bring to a simmer.
  6. Return the chicken to the skillet and stir everything together. Cook for 2-3 minutes to meld the flavors.
  7. Remove from heat and garnish with fresh parsley before serving.
