A quick and easy smoky chipotle mayo sauce perfect for tacos, burgers, and fries. This creamy, tangy sauce packs a flavorful punch with simple pantry ingredients.

  • 1 cup mayonnaise (240 ml)
  • 2 tablespoons chipotle peppers in adobo sauce, finely chopped
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt, or to taste
  • Pinch of black pepper

Instructions

  1. Remove two chipotle peppers from the can and finely chop them. Use one pepper for less heat if preferred. (About 5 minutes)
  2. In a mixing bowl, combine 1 cup mayonnaise, 1 tablespoon fresh lime juice, and 1/2 teaspoon garlic powder. Whisk until smooth and creamy. (2 minutes)
  3. Stir in the chopped chipotle peppers and 1/2 teaspoon smoked paprika. (1 minute)
  4. Add salt (start with 1/4 teaspoon) and a pinch of black pepper. Taste and adjust seasoning as needed. If too spicy, add more mayo or lime juice to balance. (2 minutes)
  5. Cover and refrigerate for at least 30 minutes to let flavors meld and sauce thicken. (30 minutes)
  6. Before serving, stir and taste again. Adjust salt or lime juice if needed. Add cayenne or extra chipotle pepper for more heat if desired. (1 minute)

Notes

Do not skip the resting time; chilling the sauce for at least 30 minutes deepens the flavor and thickens the texture. Adjust chipotle peppers to control heat. Fresh lime juice is preferred over bottled for brightness. Can substitute half mayo with Greek yogurt for lighter version or use avocado mayo for dairy-free. Sauce keeps well refrigerated for up to one week. Avoid freezing as mayo may separate.
