Flavorful Hatch Green Chile Chicken Stuffed Sweet Potatoes

A smoky, spicy, and comforting recipe featuring roasted Hatch green chiles and tender chicken stuffed inside fluffy sweet potatoes. Perfect for a quick and satisfying weeknight dinner.

  • 45 medium sweet potatoes
  • 2 large boneless, skinless chicken breasts (or 3 smaller ones), cooked and shredded
  • 34 medium fresh Hatch green chiles, roasted, peeled, and chopped (or fire-roasted canned green chiles as substitute)
  • 2 tablespoons extra virgin olive oil, divided
  • 1 medium yellow or white onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 tablespoon fresh lime juice
  • 2 tablespoons fresh cilantro, chopped (optional)
  • Salt and black pepper, to taste
  • 1 cup shredded Monterey Jack or Pepper Jack cheese (optional)
  • Sour cream or Greek yogurt, for serving

Instructions

  1. Preheat oven to 425°F (220°C). Scrub sweet potatoes and prick with a fork. Place on a baking sheet and roast for 45-55 minutes, turning once halfway, until tender.
  2. Roast Hatch green chiles on oven rack or under broiler, turning occasionally until skin is charred and blistered (10-15 minutes). Transfer to a bowl, cover with plastic wrap, and steam for 10 minutes.
  3. Peel charred skin off chiles, remove stems and seeds, then chop roughly.
  4. Heat 1 tablespoon olive oil in a skillet over medium heat. Sauté onion until softened, about 5 minutes. Add garlic and cook 1 minute.
  5. Add shredded chicken, chopped Hatch chiles, cumin, smoked paprika, salt, and pepper. Cook 5-7 minutes until heated through and fragrant.
  6. Remove from heat and stir in lime juice and chopped cilantro.
  7. When sweet potatoes are cool enough to handle, slice lengthwise and fluff insides with a fork. Spoon chicken mixture into each potato.
  8. Sprinkle cheese over stuffed potatoes and broil 2-3 minutes until cheese melts and bubbles.
  9. Serve topped with sour cream or Greek yogurt and extra cilantro if desired.

Use gloves when handling Hatch chiles if sensitive to heat. Poach chicken breasts in seasoned broth for juicier meat. Roasting fresh Hatch chiles is key for smoky flavor. Cheese broiling adds a golden crust and bubbly texture. Can prepare sweet potatoes ahead and reheat stuffed under broiler. For dairy-free, omit cheese and sour cream or use alternatives like avocado crema.
