Flavorful Honey Glazed Beets

A quick and easy sweet and tangy side dish featuring roasted beets glazed with honey, olive oil, and apple cider vinegar. Perfect for busy weeknights or special occasions.

Ingredients

  • 4 medium-sized fresh beets, scrubbed and trimmed
  • 3 tablespoons natural honey
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 clove fresh garlic, minced (optional)
  • ½ teaspoon flaky sea salt
  • Freshly ground black pepper, to taste
  • A few sprigs fresh thyme or rosemary for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the beets clean under running water. Trim off the greens and root ends. Peel if desired. Cut into quarters.
  3. In a mixing bowl, combine honey, olive oil, apple cider vinegar, and minced garlic. Whisk until smooth.
  4. Add beet quarters to the bowl and toss gently to coat evenly with the honey glaze.
  5. Spread the glazed beets in a single layer on a lined baking sheet or roasting pan, ensuring they are not crowded.
  6. Roast for 35-40 minutes, tossing or brushing with leftover glaze halfway through (around 20 minutes). Beets should be tender and caramelized.
  7. Remove from oven and sprinkle with flaky sea salt and freshly cracked black pepper. Garnish with fresh thyme or rosemary sprigs if desired.
  8. Serve warm or at room temperature.

Notes

To prevent honey from burning, toss the beets halfway through roasting. Use maple syrup instead of honey for a vegan version. Smaller beets or thinner slices cook faster, so adjust roasting time accordingly. Flaky sea salt at the end adds texture and flavor contrast.
