A quick and easy grilled chicken recipe featuring a sweet and tangy honey lime glaze, perfect for summer BBQs and crowd-pleasing meals.

  • 4 boneless, skinless chicken breasts (about 4 medium pieces)
  • ⅓ cup (113g) honey (raw or wildflower preferred)
  • Juice of 2 fresh limes
  • 1 teaspoon lime zest
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • ¼ teaspoon chili flakes (optional)
  • 1 teaspoon salt (sea salt or kosher salt)
  • ½ teaspoon freshly ground black pepper
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a mixing bowl, whisk together honey, freshly squeezed lime juice, lime zest, minced garlic, olive oil, chili flakes (if using), salt, and black pepper (about 3 minutes).
  2. Place chicken breasts in a resealable plastic bag or shallow dish. Pour marinade over chicken, ensuring each piece is well coated. Seal or cover and refrigerate for at least 30 minutes, up to 2 hours. Do not marinate longer than 4 hours.
  3. Preheat grill to medium-high heat (about 400°F / 200°C). If using charcoal, wait until coals are glowing red with a light layer of ash. Lightly oil grill grates to prevent sticking.
  4. Remove chicken from marinade, letting excess drip off. Place chicken on grill and cook for 6–7 minutes per side, brushing occasionally with leftover marinade or extra honey-lime glaze to build a sticky coating. Flip carefully using tongs.
  5. Check doneness with a meat thermometer; chicken is done at 165°F (74°C). The glaze should be caramelized and slightly charred with a glossy finish.
  6. Transfer chicken to a plate and let rest for 5 minutes to allow juices to redistribute.
  7. Garnish with freshly chopped cilantro if desired and serve immediately.

Notes

Pat chicken dry before marinating to help glaze stick and prevent flare-ups. Use a silicone basting brush to apply glaze every few minutes while grilling. Avoid flipping chicken too often to maintain caramelization. Rest chicken for 5 minutes after grilling for juiciness. If glaze burns, lower heat or move chicken to cooler grill area.
