  • 34 slices Genoa salami
  • 34 slices capicola or ham
  • Fresh mozzarella, sliced (small-ball mozzarella or bocconcini preferred)
  • 34 slices ripe Roma tomatoes
  • Handful shredded iceberg or romaine lettuce
  • Thinly sliced red onion (optional)
  • Sliced banana peppers or pepperoncini
  • Italian Dressing:
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 minced garlic clove
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Pinch of crushed red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • Optional extras: fresh basil leaves, sliced black olives

Instructions

  1. Make the Italian Dressing: In a small bowl, whisk together 3 tablespoons extra virgin olive oil, 1 tablespoon red wine vinegar, 1 minced garlic clove, 1/2 teaspoon dried oregano, 1/2 teaspoon dried basil, a pinch of crushed red pepper flakes (if using), and salt and pepper to taste. Set aside.
  2. Prepare the Bread: Slice the sub roll horizontally, leaving a hinge on one side. Rub the cut interior with the halved garlic clove. Drizzle or brush lightly with olive oil.
  3. Toast the Bread (Optional): Place the bread cut side down in a hot skillet or toaster oven until golden and slightly crisp, about 2-3 minutes.
  4. Layer the Meats and Cheese: Place 3-4 slices of Genoa salami evenly along the bread, followed by 3-4 slices of capicola or ham. Add fresh mozzarella slices on top.
  5. Add Fresh Veggies: Layer 3-4 slices of Roma tomatoes, a handful of shredded lettuce, thin rings of red onion, and banana peppers. Add olives or fresh basil if desired.
  6. Drizzle Dressing: Spoon about 2 tablespoons of the homemade Italian dressing over the assembled ingredients.
  7. Close and Press: Fold the sandwich closed and press lightly. Let rest for 2-3 minutes to meld flavors.
  8. Slice and Serve: Cut the sandwich in half or smaller portions and serve immediately.

Notes

Rub garlic on bread for subtle flavor. Toast bread lightly to prevent sogginess. Layer ingredients thinly for balanced bites. Make dressing fresh and add just before serving if prepping ahead. Use serrated knife to avoid squishing bread.
