A quick and easy Mexican-inspired rice and beans dish that is hearty, flavorful, and perfect for any meal. Toasted rice with cumin, garlic, and tomato sauce creates a comforting and satisfying meal.

  • 1 cup long-grain white rice (190g)
  • 1 can black beans, drained and rinsed (15 oz / 425g)
  • 2 tablespoons vegetable oil or olive oil
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • ½ cup tomato sauce (120ml)
  • 2 cups vegetable broth or water (480ml)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons fresh cilantro, chopped (optional)
  • Lime wedges (optional)

Instructions

  1. Rinse the rice under cold water until water runs clear to remove excess starch. Drain canned black beans thoroughly. Chop the onion finely and mince the garlic cloves.
  2. Heat 2 tablespoons of oil in a large skillet over medium heat. Add the rinsed rice and stir continuously for about 5 minutes, until the rice is lightly golden and smells nutty.
  3. Push the toasted rice to the side and add the chopped onion and garlic to the pan. Cook for 3-4 minutes, stirring often, until the onion is soft and translucent but not browned.
  4. Stir in cumin and chili powder, letting them toast for 30 seconds to release their aroma. Then mix in the tomato sauce, coating the rice and onions evenly.
  5. Add the vegetable broth and drained black beans. Stir gently to combine everything. Raise the heat to bring the mixture to a boil.
  6. Once boiling, reduce heat to low and cover the skillet tightly. Let it simmer for 18-20 minutes without lifting the lid.
  7. Turn off the heat and let the rice rest, covered, for 5 minutes. Remove the lid and fluff the rice with a fork. Taste and adjust salt and pepper.
  8. Sprinkle chopped cilantro on top and serve with lime wedges on the side.

Notes

Toast the rice well for best flavor and texture. Use fresh spices for maximum aroma. Avoid lifting the lid while simmering to keep rice fluffy. Rinse canned beans to reduce sodium and canned flavor. Adjust seasoning gradually. Add a splash of broth or water if rice is dry after cooking.
