  • 1 pound fresh radishes, washed and trimmed
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon white miso paste
  • 1 tablespoon olive oil
  • 1 teaspoon honey
  • 1 teaspoon soy sauce
  • 1 tablespoon toasted sesame seeds
  • Salt and pepper to taste
  • Fresh chives or green onions, finely chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash and trim the radishes, leaving a bit of the green stem for presentation. Slice larger radishes in half to ensure even cooking.
  3. In a small bowl, mix the softened butter, miso paste, honey, and soy sauce until smooth.
  4. In a large mixing bowl, combine the radishes with olive oil, salt, and pepper. Toss well to coat evenly.
  5. Spread the radishes out on the prepared baking sheet in a single layer. Roast for 20-25 minutes, flipping halfway through, until they’re tender and starting to caramelize.
  6. Remove the radishes from the oven and transfer them to a mixing bowl. Add the miso butter and toss until the radishes are thoroughly coated.
  7. Transfer the radishes back to the baking sheet and sprinkle with toasted sesame seeds. Return to the oven for 5 minutes to allow the flavors to meld.
  8. Garnish with chopped chives or green onions before serving.
