  • 2 ripe peaches, thinly sliced
  • 4 ounces burrata cheese, torn into chunks
  • 2 tablespoons honey
  • 1/4 teaspoon chili flakes
  • 4 slices rustic bread (such as sourdough or country loaf)
  • 1 tablespoon extra virgin olive oil, for brushing
  • Pinch of flaky sea salt
  • Fresh basil or mint leaves (optional, for garnish)

Instructions

  1. Preheat grill pan or skillet over medium heat. Brush each slice of bread lightly with olive oil on both sides.
  2. Toast bread slices for 2-3 minutes per side until golden and crisp with grill marks. If using a toaster, toast until golden then brush with olive oil.
  3. Wash and dry peaches. Slice into thin wedges about 1/4 inch thick.
  4. In a small bowl, combine honey and chili flakes. Stir well to evenly distribute the heat.
  5. On each toasted bread slice, tear and spread chunks of burrata cheese gently to keep creaminess visible.
  6. Layer peach slices on top of burrata, slightly overlapping for presentation.
  7. Drizzle honey-chili mixture evenly over each toast.
  8. Finish with a pinch of flaky sea salt and scatter fresh basil or mint leaves if using.
  9. Serve immediately while bread is crisp and burrata is luscious.

Notes

Use day-old rustic bread for best toasting results. Pat peach slices dry if overly juicy to prevent soggy toast. Tear burrata by hand to keep creamy texture. Assemble just before serving to maintain crispness and freshness. Adjust chili flakes to taste. Substitute burrata with creamy goat cheese or ricotta if needed.
