  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 4 slices good quality rustic or sourdough bread

Instructions

  1. If using dried morels, soak them in warm water for 20-30 minutes until fully rehydrated. Drain and pat dry thoroughly. If fresh, rinse lightly and dry thoroughly. Slice morels lengthwise into halves or quarters depending on size.
  2. Toast the bread slices until golden and crisp using a toaster or oven broiler. Set aside warm.
  3. Heat the unsalted butter in a medium skillet over medium heat. Swirl occasionally. When the butter foams and turns golden brown with a nutty aroma, remove from heat carefully.
  4. Quickly stir in the minced garlic and fresh thyme leaves. Sauté for about 30 seconds until fragrant but not browned.
  5. Add the sliced morel mushrooms to the pan. Cook gently, stirring occasionally, until mushrooms are tender and coated in brown butter, about 5-7 minutes. Season with salt and freshly ground black pepper to taste.
  6. Spoon the buttery morel mixture generously over each slice of toasted bread. Optionally, garnish with fresh thyme or a twist of lemon zest.
  7. Serve immediately while warm.

Notes

If mushrooms release too much water, increase heat slightly and cook longer to evaporate moisture. Avoid overcrowding the pan; cook in batches if needed. Brown the butter slowly and watch closely to prevent burning. For gluten-free, use gluten-free bread. Vegan version can use vegan margarine or olive oil instead of butter.
