  • 34 sprigs fresh dill, roughly chopped
  • 23 garlic cloves, smashed or thinly sliced
  • 1 cup (8 fl oz) white vinegar (distilled preferred)

  • 1 tablespoon pickling salt or kosher salt
  • 1 teaspoon sugar
  • 1 to 1 ½ teaspoons red chili flakes
  • Pinch of cayenne pepper (optional)
  • 810 whole black peppercorns

Instructions

  1. Rinse 1 pound of fresh green beans under cold water. Snap or cut off the stem ends, then cut into 2-3 inch pieces if desired or leave whole.
  2. Place the beans in a large mixing bowl and sprinkle with 1 tablespoon of pickling salt. Toss to coat and cover with cold water by about an inch. Soak for 1 hour at room temperature.
  3. Drain and rinse the beans well under cold water to remove excess salt. Pat dry with a clean towel or use a salad spinner.
  4. In a small saucepan, combine 1 cup white vinegar, 1 cup water, 1 teaspoon sugar, 1 to 1½ teaspoons red chili flakes, a pinch of cayenne pepper, and 8-10 black peppercorns. Warm over medium heat, stirring until sugar dissolves. Do not boil. Remove from heat and let cool slightly.
  5. Place 3-4 sprigs of fresh dill and 2-3 smashed garlic cloves at the bottom of a clean quart-sized jar.
  6. Pack the drained beans into the jar, leaving about 1 inch of headspace.
  7. Pour the warm brine over the beans, ensuring they are fully submerged. Press down gently if needed.
  8. Seal the jar tightly and refrigerate for at least 24 hours before tasting. Flavor improves over 2-3 days.
  9. Enjoy cold as a snack or side.
