These smoky BBQ bacon cheeseburger sliders are perfect party bites featuring juicy beef patties, crispy bacon, melted cheddar cheese, and a tangy smoky BBQ sauce on soft slider buns.

  • 1 pound (450 g) ground beef (80/20 blend)
  • 12 slider buns
  • 68 thick-cut bacon strips
  • 6 cheddar cheese slices
  • ½ cup (120 ml) smoky BBQ sauce
  • 2 tablespoons (30 ml) yellow mustard
  • Sliced pickles (optional)
  • ¼ cup (40 g) finely diced onion
  • Salt to taste
  • Freshly ground black pepper to taste
  • 2 tablespoons (30 g) melted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the bacon in a skillet over medium heat until crisp, about 6-8 minutes, flipping occasionally. Drain on paper towels and slice each strip in half to fit slider buns.
  3. In a mixing bowl, combine ground beef, diced onion, 1 teaspoon salt, and ½ teaspoon black pepper. Mix gently with your hands.
  4. Form 12 small patties, about 2 ounces (55 g) each, making a slight indentation in the center of each patty with your thumb.
  5. Heat a large skillet or grill pan over medium-high heat. Cook patties for about 3 minutes per side for medium doneness without pressing down.
  6. After flipping patties, brush the cooked side with smoky BBQ sauce. Flip again, add half a slice of cheddar cheese on top, and cover the pan for 1-2 minutes until cheese melts.
  7. Split slider buns and brush insides with melted butter. Place on a baking sheet and toast in the oven for 3-4 minutes until golden.
  8. Assemble sliders by placing a cheese-topped patty on the bottom bun, adding two halves of cooked bacon, and optional pickles. Spread a thin layer of yellow mustard on the top bun and close the sliders.
  9. Return the assembled sliders to the oven for 5 minutes to meld flavors and warm through.
  10. Serve immediately while hot and fresh.

Notes

Do not overwork the meat to keep patties tender. Make a thumb indentation in patties to prevent puffing. Brush BBQ sauce after flipping patties to avoid burning. Toast buns with melted butter to prevent sogginess. Cook bacon and patties ahead to save time and warm before serving.
