  • 3 tablespoons honey (raw or regular)
  • 1 tablespoon hot sauce (smoky chipotle recommended)
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • 4 salmon fillets (about 6 oz / 170 g each, skin-on preferred)
  • 1 tablespoon freshly squeezed lemon juice
  • Salt and pepper to taste
  • 1 large ripe mango, diced
  • ½ cup red bell pepper, finely chopped
  • ¼ cup red onion, finely chopped
  • 3 tablespoons fresh cilantro, chopped
  • 2 tablespoons freshly squeezed lime juice
  • 1 small jalapeño, seeded and minced (optional)
  • Pinch of salt to taste

Instructions

  1. Prepare the glaze: In a small bowl, whisk together honey, hot sauce, minced garlic, smoked paprika, olive oil, salt, and pepper until well combined. Set aside.
  2. Season the salmon: Pat salmon fillets dry with paper towels. Drizzle lemon juice over each piece, then season lightly with salt and pepper on both sides. Let rest while preparing salsa.
  3. Make the mango salsa: In a medium bowl, combine diced mango, chopped red bell pepper, red onion, cilantro, lime juice, jalapeño (if using), and a pinch of salt. Toss gently to mix. Cover and refrigerate until ready to serve.
  4. Preheat the grill to medium-high heat (around 400°F / 205°C). Clean and oil the grates to prevent sticking.
  5. Glaze and grill the salmon: Using a brush, coat salmon fillets generously with the spicy honey glaze on both sides. Place skin-side down on the grill. Grill for 4-5 minutes without moving to get grill marks.
  6. Flip carefully: Flip salmon gently using spatula or tongs. Brush more glaze on the cooked side. Grill for another 3-4 minutes, brushing glaze once more halfway through. Salmon should be opaque and flake easily but remain moist.
  7. Rest and serve: Remove salmon from grill and let rest for 2 minutes to redistribute juices. Serve topped with a generous spoonful of mango salsa.

Notes

If glaze starts burning, move salmon to cooler spot or reduce heat. Brush glaze in thin layers to avoid burning. Let mango salsa sit at least 10 minutes before serving for flavors to meld. Use salmon fillets of similar thickness for even cooking. Skin-on salmon should be grilled skin-side down first to keep flesh moist. Leftovers keep up to 2 days refrigerated; reheat gently in low oven to avoid drying out.
