  • ¼ cup (50g) brown sugar
  • 2 teaspoons ground cinnamon
  • 2 tablespoons unsalted butter, melted
  • Cream cheese glaze:
  • 4 oz (115g) cream cheese, softened
  • 1 cup (120g) powdered sugar
  • 23 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together flour, baking powder, sugar, and salt until well combined.
  2. In a separate bowl, whisk egg, milk, and melted butter until smooth.
  3. Pour wet ingredients into dry ingredients and gently fold until just combined; batter should be slightly lumpy.
  4. In a small bowl, mix brown sugar, cinnamon, and melted butter until crumbly and spreadable.
  5. Preheat griddle or pan over medium heat and lightly grease with butter.
  6. Pour about ¼ cup batter onto griddle for each pancake. Quickly spoon or pipe cinnamon mixture onto batter, then cover lightly with more batter to seal swirl.
  7. Cook pancakes until bubbles form and edges look set, about 2-3 minutes. Flip and cook another 1-2 minutes until golden brown. Repeat for all pancakes.
  8. In a small bowl, beat cream cheese, powdered sugar, vanilla extract, and milk until smooth and drizzle-worthy; add milk as needed.
  9. Stack pancakes on a plate and drizzle cream cheese glaze generously over the top and between layers. Serve immediately.
