  • 4 oz (115 g) cream cheese, softened
  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Separate the eggs, placing the whites in a large clean bowl and the yolks in a smaller bowl.
  3. Using an electric mixer on medium speed, beat the egg whites until foamy. Gradually add the baking powder, then increase speed to high and whip until stiff peaks form.
  4. In the smaller bowl, beat the egg yolks with the softened cream cheese until smooth and creamy.
  5. Gently fold about a third of the whipped egg whites into the yolk and cream cheese mixture to lighten it. Then carefully fold in the remaining whites, preserving as much air as possible.
  6. Spoon the batter onto the prepared baking sheet, shaping it into a rough loaf or a few smaller mounds.
  7. Bake for 25–30 minutes, or until the bread is golden on top and set in the middle.
  8. Let the bread cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.

Notes

Use room temperature eggs and softened cream cheese for best volume and smooth texture. Fold egg whites gently to avoid deflating the batter. Bake at low temperature (300°F) to prevent browning and drying out. Let bread cool before slicing to avoid crumbling.
