  • 2 ½ cups (315 g) all-purpose flour (plus extra for dusting)
  • 2 ¼ teaspoons (7 g) active dry yeast (one packet)
  • ¾ cup (180 ml) warm whole milk (110°F/43°C)
  • ¼ cup (50 g) granulated sugar
  • ¼ cup (56 g) unsalted butter, melted and cooled
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon salt
  • ¾ cup (150 g) light brown sugar, packed
  • 2 tablespoons ground cinnamon
  • 3 tablespoons unsalted butter, softened
  • ½ cup (90 g) rainbow sprinkles (classic jimmies)
  • 4 ounces (113 g) cream cheese, softened
  • ¼ cup (30 g) powdered sugar
  • 2 tablespoons (30 ml) milk or cream
  • ½ teaspoon pure vanilla extract

Instructions

  1. Activate the yeast by pouring warm milk (110°F/43°C) into a bowl, sprinkle the yeast and a pinch of sugar over it. Let it sit until foamy and bubbly, about 5 minutes.
  2. In a large bowl or mixer, combine the flour, sugar, and salt. Add the melted butter, egg, vanilla extract, and the activated yeast mixture. Mix until a shaggy dough forms.
  3. Knead the dough by hand on a floured surface or with a stand mixer dough hook until smooth, elastic, and slightly tacky but not sticky, about 8-10 minutes.
  4. Shape the dough into a ball and place in a greased bowl. Cover with plastic wrap or a damp towel. Let rise in a warm, draft-free spot until doubled in size, about 1 to 1.5 hours.
  5. While the dough rises, mix brown sugar and cinnamon in a bowl. Set aside the softened butter and sprinkles.
  6. Punch down the risen dough gently and roll it out on a floured surface into a 15×10 inch rectangle.
  7. Brush the softened butter evenly over the dough. Sprinkle the cinnamon sugar mixture on top, then scatter the rainbow sprinkles evenly over everything.
  8. Starting from the long edge, roll the dough tightly into a log. Use a sharp knife or dental floss to cut 12 equal slices about 1.25 inches thick.
  9. Place the rolls cut-side up into a greased 9×13-inch pan, leaving a little space between each. Cover loosely and let rise until puffy, about 45 minutes.
  10. Preheat oven to 350°F (175°C). Bake rolls until golden brown and cooked through, about 20-25 minutes.
  11. While baking, beat cream cheese, powdered sugar, milk, and vanilla until smooth and creamy.
  12. Remove rolls from oven, let cool 5 minutes, then generously spread the cream cheese glaze over warm rolls. Serve immediately.

Notes

Do not skip the second rise for fluffy rolls. Use classic jimmies sprinkles to avoid melting or bleeding colors. Dental floss works well for clean slicing. Keep milk temperature at 110°F to activate yeast properly. For gluten-free, use 1:1 gluten-free flour blend; for dairy-free, substitute butter with coconut oil and milk with almond or oat milk.
