  • ½ cup unsalted butter, softened
  • 3 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line your muffin tin with cupcake liners.
  2. In a medium bowl, whisk together gluten-free flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Add dry ingredients in three additions, alternating with buttermilk, starting and ending with dry ingredients. Mix gently until just combined.
  6. Fold in rainbow sprinkles gently using a rubber spatula.
  7. Divide batter evenly among cupcake liners, filling about ⅔ full. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. For the frosting, beat cream cheese and softened butter until creamy and smooth.
  10. Gradually add powdered sugar, mixing on low speed to avoid sugar clouds.
  11. Stir in vanilla extract and a pinch of salt. Beat until fluffy, about 3 minutes.
  12. Pipe or spread frosting generously over cooled cupcakes. Add extra sprinkles on top if desired.
