Instructions

  1. In a large bowl, whisk together 4 large eggs, 1 cup milk or half-and-half, 2 tablespoons sugar, 1 teaspoon vanilla extract, ½ teaspoon almond extract, ½ teaspoon ground cinnamon, and a pinch of salt until fully combined.
  2. In a separate clean, dry bowl, beat 4 large egg whites with a whisk or electric mixer until soft peaks form.
  3. Gently fold the beaten egg whites into the batter mixture using a spatula, taking care not to deflate the whites.
  4. Dip each slice of brioche or challah into the batter, soaking each side for about 20-30 seconds. Let excess drip off before cooking.
  5. Melt about 1 tablespoon unsalted butter in a non-stick skillet or griddle over medium heat.
  6. Place soaked bread slices onto the pan and cook for about 3-4 minutes per side, or until golden brown and cooked through.
