  • 1 cup (240ml) whole milk, warm (about 110°F/43°C)
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (115g) unsalted butter, softened (plus extra melted butter for brushing)
  • 2 large eggs, room temperature
  • 1 1/2 tsp salt
  • 2 tbsp honey
  • Optional: poppy seeds or sesame seeds for topping
  • Optional: butter for serving

Instructions

  1. Proof the yeast: In a small bowl, combine warm milk (110°F/43°C), sugar, and active dry yeast. Stir gently and let sit for 5-10 minutes until foamy.
  2. Mix the dough: In a large bowl or stand mixer bowl, combine flour and salt. Add yeast mixture, softened butter, honey, and eggs. Mix until dough starts to come together.
  3. Knead the dough on a floured surface for 8-10 minutes until smooth and elastic, or knead with stand mixer on medium speed for 5-6 minutes. Add flour if dough is too sticky.
  4. First rise: Shape dough into a ball, place in a lightly oiled bowl, cover with towel or plastic wrap, and let rise in a warm spot for 1 to 1.5 hours until doubled in size.
  5. Shape the rolls: Punch down dough, divide into 12 equal pieces (~2 oz/55g each), roll into smooth balls, and place close but not touching in a greased 8×8-inch baking dish or on a lined baking sheet.
  6. Second rise: Cover rolls loosely and let rise for 30-45 minutes until puffy.
  7. Bake: Preheat oven to 350°F (175°C). Bake rolls for 20-25 minutes until golden brown and hollow-sounding when tapped.
  8. Butter them up: Remove rolls from oven and immediately brush generously with melted butter.
  9. Cool slightly and serve warm. Rolls are best fresh but can be reheated.
