  • 1 ½ cups (240g) cooked or canned black-eyed peas, rinsed
  • 1 cup (150g) sweet corn kernels, fresh or thawed frozen
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup (150g) cherry tomatoes, halved
  • ¼ cup (40g) red onion, finely chopped
  • 1 small jalapeño, seeded and minced (optional)
  • ¼ cup (10g) fresh cilantro, chopped
  • ¼ cup (60ml) fresh lime juice
  • 3 tablespoons (45ml) extra virgin olive oil
  • 1 teaspoon (5ml) honey or agave syrup
  • ½ teaspoon (2.5ml) ground cumin
  • Salt and freshly ground black pepper, to taste

Instructions

  1. If using canned black-eyed peas, drain and rinse under cold water to reduce sodium. Place in a large mixing bowl.
  2. Dice the red and green bell peppers into small, bite-sized pieces. Halve the cherry tomatoes and finely chop the red onion. Mince the jalapeño if using, removing seeds for less heat.
  3. Add the sweet corn kernels and chopped cilantro to the bowl with the black-eyed peas and veggies.
  4. In a small bowl, whisk together the fresh lime juice, extra virgin olive oil, honey or agave syrup, ground cumin, salt, and pepper to make the dressing.
  5. Pour the dressing over the black-eyed peas and vegetables. Toss gently until everything is evenly coated.
  6. Cover and refrigerate the cowboy caviar for at least 30 minutes to allow flavors to meld.
  7. Before serving, stir again and adjust seasoning with extra salt, pepper, or lime juice if needed.

Notes

For best flavor, use fresh lime juice and organic produce if possible. Letting the salad rest in the fridge for at least 30 minutes enhances the taste. Adjust the amount of jalapeño to control heat. Uniform chopping ensures balanced bites. Can be served immediately if short on time.
