  • 1 small red onion, thinly sliced
  • 2 tablespoons fresh dill, finely chopped
  • 2 tablespoons white wine vinegar
  • 1/2 cup sour cream
  • 2 tablespoons mayonnaise
  • 1 teaspoon sugar or honey
  • 1/4 teaspoon garlic powder
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Rinse cucumbers under cold water. Using a mandoline or sharp knife, slice into thin rounds about 1/8 inch thick. If very watery, sprinkle with salt and let sit in a colander for 10 minutes, then pat dry.
  2. Peel and thinly slice red onion into fine half-moons. Soak in cold water for 5 minutes if a milder flavor is desired, then drain well.
  3. Finely chop fresh dill.
  4. In a small bowl, whisk together sour cream, mayonnaise, white wine vinegar, sugar or honey, garlic powder, salt, and pepper until smooth and creamy. Adjust seasoning to taste.
  5. In a large mixing bowl, gently toss cucumbers, red onion, and dill. Pour dressing over and toss gently to coat evenly without bruising cucumbers.
  6. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld. Drain any excess liquid before serving if needed.

Notes

To prevent watery salad, salt cucumber slices and drain excess moisture before mixing. Salad tastes better after chilling at least 30 minutes or overnight. Use fresh dill for best flavor. Variations include dairy-free substitutions and adding extras like feta or pine nuts.
