A light, crunchy, and refreshing cucumber salad enhanced with savory everything bagel seasoning and a creamy yogurt-based dressing, perfect for hot summer days.

  • 3 medium seedless cucumbers (about 1 pound or 450 grams), thinly sliced
  • 2 tablespoons everything bagel seasoning
  • ¼ small red onion, thinly sliced (optional)
  • 2 tablespoons fresh dill, chopped
  • ¼ cup Greek yogurt (60 ml)
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon honey or maple syrup
  • Salt and black pepper to taste

Instructions

  1. Rinse 3 medium seedless cucumbers under cold water. Using a sharp knife, slice them thinly—about ⅛-inch (3 mm) thickness. Optionally, spin dry in a salad spinner to remove excess moisture.
  2. Thinly slice ¼ of a small red onion. If desired, soak slices in cold water for 5 minutes to mellow the flavor, then drain.
  3. In a small bowl, whisk together ¼ cup Greek yogurt, 2 tablespoons lemon juice, 1 tablespoon olive oil, and 1 teaspoon honey or maple syrup until smooth. Season lightly with salt and black pepper.
  4. In a medium mixing bowl, combine the sliced cucumbers, red onion, and chopped dill. Pour the dressing over and gently toss to combine without bruising the cucumbers.
  5. Sprinkle 2 tablespoons of everything bagel seasoning evenly over the salad just before serving. Toss lightly to distribute the seasoning while keeping the crunch intact.
  6. Let the salad rest for 5 minutes at room temperature to allow flavors to meld. Serve chilled or at room temperature.

Notes

Add everything bagel seasoning just before serving to keep it crunchy. Dry cucumber slices well to avoid soggy salad. Can substitute parsley for dill or use vegan yogurt for dairy-free version. Variations include adding cherry tomatoes, radishes, or protein like shrimp or feta.
