  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • 1 garlic clove, minced
  • 1 tablespoon fresh oregano, finely chopped (or 1 teaspoon dried oregano)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prep the Vegetables (10 minutes): Peel cucumbers if desired and slice into 1/4 inch thick rounds or half-moons. Chop tomatoes into bite-sized chunks. Thinly slice red onion if using; soak in cold water for 5 minutes to mellow flavor.
  2. Make the Oregano Vinaigrette (5 minutes): In a small bowl or jar, combine olive oil, red wine vinegar, Dijon mustard, honey, minced garlic, and chopped oregano. Whisk or shake until emulsified and slightly thickened. Adjust salt and pepper to taste.
  3. Toss the Salad (3 minutes): In a medium bowl, combine cucumbers, tomatoes, red onion slices, and crumbled feta. Pour vinaigrette over and toss gently to coat evenly.
  4. Let it Rest (Optional, 10 minutes): Allow salad to sit at room temperature to let flavors meld and oregano aroma bloom.
  5. Final Touches: Sprinkle extra fresh oregano leaves on top before serving.
