A quick and easy side dish featuring tender-crisp green beans sautéed with fresh garlic in olive oil, delivering a bright and flavorful bite perfect for any occasion.

  • 1 pound fresh green beans, trimmed and washed
  • 34 medium garlic cloves, minced
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly cracked black pepper
  • Optional: zest or juice of ½ lemon
  • Optional: pinch of crushed red pepper flakes

Instructions

  1. Trim and wash the green beans, snapping off the stem ends and rinsing under cold water. Pat dry.
  2. Bring a large pot of salted water (about 4 quarts) to a boil with 1 tablespoon of salt.
  3. Blanch the green beans in boiling water for about 3 minutes until bright green and just tender but still crisp.
  4. Immediately transfer the beans to a large bowl of ice water to stop cooking and preserve color and texture. Leave for 3-4 minutes, then drain thoroughly.
  5. While beans cool, mince the garlic cloves finely.
  6. Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering but not smoking.
  7. Add the minced garlic and sauté for 30-45 seconds, stirring constantly, until fragrant but not browned.
  8. Add the drained green beans to the skillet and toss to coat in garlic oil. Sauté for 3-4 minutes until heated through and slightly tender but still crisp.
  9. Season with ½ teaspoon sea salt and ¼ teaspoon freshly cracked black pepper. Add optional lemon zest or juice and red pepper flakes if using.
  10. Give everything a final toss and serve immediately.

Notes

Do not skip the ice water bath after blanching to preserve the bright color and crisp texture. Avoid burning the garlic by stirring constantly and removing from heat if it browns. Dry beans well before sautéing to prevent oil splatter and sogginess. Optional additions include lemon zest/juice and crushed red pepper flakes for extra flavor.
