These fresh cucumber cream cheese roll-ups are a quick, easy, and healthy snack featuring thin cucumber slices rolled around a herbed cream cheese filling. Perfect for potlucks, light lunches, or anytime you want a refreshing bite.

  • 2 large English cucumbers, thinly sliced lengthwise
  • 8 oz (225 g) cream cheese, softened
  • 2 tbsp fresh dill, finely chopped
  • 1 tsp fresh lemon juice
  • 1/4 tsp garlic powder
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: sliced green onions or chives
  • Optional: red pepper flakes

Instructions

  1. Wash and dry the cucumbers thoroughly. Using a mandoline or sharp knife, slice lengthwise into thin strips about 1/8 inch (3 mm) thick.
  2. Lay the cucumber slices flat on a clean kitchen towel or paper towels to absorb excess moisture. Let them sit for 5 minutes.
  3. In a mixing bowl, combine softened cream cheese, chopped fresh dill, fresh lemon juice, garlic powder, salt, and pepper. Stir until smooth and well blended.
  4. Using a spoon or small spatula, spread a thin, even layer of the cream cheese mixture along each cucumber slice (about 1 tablespoon per slice).
  5. Starting at one end, carefully roll each cucumber slice into a tight cylinder. Place the rolls seam-side down on a serving platter.
  6. Refrigerate the roll-ups for at least 15 minutes before serving to firm up the cream cheese and let flavors meld.

Notes

Pat cucumber slices dry to prevent sogginess. Use softened cream cheese at room temperature for easier spreading. Chill roll-ups before serving for best texture. Can add protein like smoked salmon or herbs for variation. Store in airtight container up to 2 days.
