A refreshing, gut-friendly mocktail blending raw kombucha with fresh mint and lime for a bubbly, herbaceous sip that’s quick and easy to make.

Ingredients

  • 16 oz (475 ml) raw kombucha (fruity or classic flavor; ginger or lime recommended)
  • 2 tbsp fresh lime juice (about 1 lime)
  • 1 tbsp simple syrup or honey (optional)
  • 1012 fresh mint leaves (washed and gently bruised)
  • Ice cubes (enough to fill 2 tall glasses)
  • Lime wedges or thin slices (for garnish)
  • Additional mint sprigs (for garnish)

Instructions

  1. Prepare your ingredients by washing mint leaves and juicing lime to get about 2 tablespoons of fresh juice. Measure simple syrup or honey if using.
  2. Place mint leaves at the bottom of each glass and gently bruise them with a muddler or back of a wooden spoon to release oils without bitterness.
  3. Add 1 tablespoon of fresh lime juice and 1/2 tablespoon of simple syrup or honey to each glass. Stir gently to combine.
  4. Fill each glass about three-quarters full with ice cubes.
  5. Slowly pour 8 oz of kombucha into each glass to preserve fizz.
  6. Gently stir the mocktail to combine ingredients without losing carbonation. Garnish with a lime wedge and a mint sprig.

Notes

Use raw, unpasteurized kombucha with live cultures for best gut health benefits. Gently bruise mint leaves to avoid bitterness. Pour kombucha slowly to preserve fizz. Adjust sweetness to taste. Can substitute honey with maple syrup for vegan option. Fresh lime juice is key for bright flavor. Serve immediately for best fizz.
