  • 4 cups romaine lettuce, chopped
  • 4 slices cooked bacon, chopped (preferably thick-cut Applewood smoked)
  • 3 large hard-boiled eggs, peeled and diced
  • 1 cup cherry tomatoes, halved
  • 1 medium ripe avocado, diced
  • 1/3 cup blue cheese crumbles (optional)
  • 1 cup cooked chicken breast, diced
  • For the Avocado Ranch Dressing:
  • 1 medium ripe avocado
  • 1/2 cup Greek yogurt (can substitute dairy-free yogurt)
  • 1/4 cup buttermilk
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 1 garlic clove, minced
  • 2 tbsp lime juice
  • Salt and pepper to taste

Instructions

  1. Make the Avocado Ranch Dressing: In a blender or food processor, combine avocado, Greek yogurt, buttermilk, parsley, dill, garlic, and lime juice. Blend until smooth and creamy. Season with salt and pepper. Adjust consistency with more buttermilk if needed.
  2. Prep the Salad Ingredients: Chop romaine lettuce, dice avocado, halve cherry tomatoes, chop cooked bacon and chicken breast, and peel and dice hard-boiled eggs. Keep blue cheese crumbles ready.
  3. Layer the Salad in Mason Jars: Start with 2-3 tablespoons of avocado ranch dressing at the bottom of each jar. Add chicken breast layer, then hard-boiled eggs, followed by cherry tomatoes, bacon, avocado, and blue cheese crumbles. Top with chopped romaine lettuce.
  4. Seal and Refrigerate: Screw on lids tightly and store in the fridge for up to 4 days. When ready to eat, shake the jar vigorously to mix dressing or pour onto a plate.

Notes

Layer dressing at the bottom to prevent soggy greens. Use fresh herbs for best flavor in dressing. Lime juice helps prevent avocado browning. Salad keeps fresh up to 4 days refrigerated. Shake well before eating. For dairy-free, substitute Greek yogurt with coconut yogurt and omit blue cheese.
