Fresh Peach Caprese Salad

A refreshing and easy summer salad combining juicy peaches, creamy fresh mozzarella, fresh basil, and a drizzle of balsamic glaze for a sweet and tangy twist on the classic Caprese.

Ingredients

  • 3 ripe but firm fresh peaches, sliced thin (about 1/4 inch thick)
  • 8 oz fresh mozzarella balls (bocconcini), sliced about 1/4 inch thick
  • 1 cup fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic glaze or reduction
  • Sea salt, to taste
  • Freshly cracked black pepper, to taste
  • Optional: crushed red pepper flakes, toasted pine nuts or candied pecans, drizzle of honey

Instructions

  1. Wash and dry peaches. Slice into thin, even wedges about 1/4 inch thick.
  2. Pat fresh mozzarella dry with a paper towel and slice into 1/4 inch thick pieces.
  3. On a serving platter, alternate layers of peach slices, mozzarella slices, and basil leaves, slightly overlapping.
  4. Lightly sprinkle sea salt and freshly cracked black pepper over the arranged salad.
  5. Drizzle extra virgin olive oil evenly over the salad, followed by balsamic glaze.
  6. Add any optional toppings such as crushed red pepper flakes, toasted pine nuts, or a drizzle of honey.
  7. Garnish with extra basil leaves and serve immediately or chill for 10 minutes to let flavors meld.

Notes

Use firm but ripe peaches to avoid mushiness. Pat mozzarella dry to prevent sogginess. Prepare ingredients just before serving to avoid browning of peaches. If making balsamic glaze at home, simmer balsamic vinegar until thickened and cool before drizzling. Optional toppings like crushed red pepper flakes or candied pecans add heat or crunch.
