Fresh Roasted Garlic Scapes with Lemon and Sea Salt

A simple and flavorful spring side dish featuring tender roasted garlic scapes brightened with fresh lemon and seasoned with sea salt.

  • 1 pound (450 grams) fresh garlic scapes, trimmed
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon flaky sea salt
  • 1 medium lemon, zested and juiced
  • Freshly ground black pepper, optional

Instructions

  1. Preheat your oven to 400°F (205°C).
  2. Wash and dry the garlic scapes thoroughly. Trim off any tough ends or wilted tips. Cut into uniform pieces about 6 to 8 inches long.
  3. In a mixing bowl, toss the garlic scapes with 2 tablespoons of extra virgin olive oil until lightly coated.
  4. Spread the scapes in a single layer on a rimmed baking sheet.
  5. Roast in the preheated oven for 12 to 15 minutes, flipping gently halfway through, until slightly browned and tender but not mushy.
  6. While roasting, zest and juice the lemon, keeping the zest separate.
  7. Transfer the roasted scapes to a serving bowl. Immediately sprinkle with sea salt and lemon zest, then drizzle with fresh lemon juice. Toss gently to combine.
  8. Add freshly ground black pepper if desired. Taste and adjust seasoning as preferred.
  9. Serve warm or at room temperature.

Notes

Watch the roasting closely after 10 minutes to avoid overcooking. Tossing the scapes with olive oil helps caramelize them without drying out. Add lemon juice only after roasting to prevent sogginess. For a spicy twist, add red pepper flakes when tossing with oil. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently in a skillet.
