  • 810 fresh basil leaves
  • 2 tablespoons fresh lemon juice
  • 12 tablespoons honey or maple syrup (optional)
  • 1 cup (240 ml) sparkling water
  • Ice cubes

Instructions

  1. Wash and hull the strawberries, then slice them. Rinse basil leaves and pat dry gently. Squeeze fresh lemon juice just before mixing. (About 5 minutes)
  2. Place the sliced strawberries and basil leaves into a mixing glass or pitcher. Using a muddler or wooden spoon, gently press down to release juices and essential oils without shredding the basil. (2-3 minutes)
  3. Pour in 2 tablespoons (30 ml) of fresh lemon juice. Add honey or maple syrup to taste, starting with 1 tablespoon and adjusting after tasting. Stir gently to combine. (1 minute)
  4. Fill the glass with 1 cup (240 ml) sparkling water. Stir lightly to blend without losing fizz. The color should turn a soft pink with basil leaves floating on top. (1 minute)
  5. Prepare serving glasses with ice cubes. Pour the mocktail over the ice and garnish with a fresh basil sprig or a strawberry slice on the rim. (1 minute)
  6. Taste and adjust sweetness or citrus as desired.

Notes

Use fresh, organic strawberries and lemon juice for best flavor. Avoid over-muddling basil to prevent bitterness. Adjust sweetness gradually. For a smoother drink, strain the muddled mixture before adding sparkling water. Chill glasses beforehand to keep the drink cooler longer. Store muddled mixture and sparkling water separately if prepping ahead.
