  • 1 cup feta cheese, crumbled

  • 1 tablespoon fresh lime or lemon juice
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Cut about 3 cups of seedless watermelon into roughly 1-inch cubes.
  2. Peel and dice 2 large cucumbers into similar-sized chunks.
  3. Crumble 1 cup of feta cheese gently with a fork to keep some chunks intact.
  4. Chop 1/4 cup fresh mint leaves finely.
  5. In a small bowl or jar, whisk together 2 tablespoons extra virgin olive oil, 1 tablespoon fresh lime or lemon juice, salt, and freshly ground black pepper until emulsified.
  6. In a large mixing bowl, gently combine the watermelon, cucumber, and crumbled feta.
  7. Pour the dressing over the salad and sprinkle the chopped mint on top.
  8. Toss everything gently using salad tongs or large spoons to avoid breaking up the watermelon cubes.
  9. Taste and adjust seasoning if needed.
  10. Chill the salad in the refrigerator for at least 15 minutes before serving.
