  • 20 fresh mint leaves, washed and dried
  • 1 tablespoon extra virgin olive oil (optional)
  • 1 medium lime, juiced (about 1 tablespoon, optional)
  • Honey, for drizzling (optional)
  • Pinch of sea salt
  • Freshly ground black pepper, to taste
  • Wooden or bamboo skewers, about 6 inches long

Instructions

  1. Rinse and dry the watermelon. Cut into roughly 1-inch cubes, aiming for uniform size.
  2. Slice the feta into similar-sized cubes (about ¾ inch). If crumbly, gently press into cubes.
  3. Pick fresh mint leaves, wash, and pat dry thoroughly.
  4. Optional: In a mixing bowl, gently toss watermelon cubes with olive oil, lime juice, sea salt, and black pepper.
  5. Assemble the skewers by threading a watermelon cube, a folded mint leaf, then a feta cube, repeating until the skewer is full (3-4 pieces per skewer).
  6. Arrange skewers on a serving platter. Drizzle lightly with honey if desired and garnish with extra mint leaves.
