Ingredients

  • Seedless watermelon, cut into 1-inch cubes
  • Feta cheese, block-style, cut into 1-inch cubes
  • Fresh mint leaves, whole, washed and patted dry
  • Optional: Extra-virgin olive oil, for drizzle
  • Optional: Freshly cracked black pepper
  • Optional: Fresh lime or lemon juice
  • Optional: Honey, lightly drizzled

Instructions

  1. Slice seedless watermelon into 1-inch cubes, aiming for firm but juicy pieces.
  2. Cut block feta into 1-inch cubes using a sharp knife, being gentle to avoid crumbling.
  3. Rinse fresh mint leaves and pat dry with a paper towel, keeping them whole.
  4. Thread one watermelon cube, followed by a mint leaf (folded if large), then a feta cube onto each skewer. Repeat if skewers are long enough.
  5. Optionally, drizzle extra-virgin olive oil or honey over the skewers. Sprinkle cracked black pepper or squeeze fresh lime juice for added flavor.
  6. Chill the skewers in the refrigerator for at least 30 minutes before serving to meld flavors and keep watermelon crisp.
