A vibrant and refreshing summer dessert featuring juicy watermelon slices topped with tangy cream cheese frosting and fresh berries. No baking required, perfect for quick and easy gatherings.

Ingredients

Scale
  • 1 medium seedless watermelon, sliced into 1-inch thick rounds
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons Greek yogurt or sour cream (optional)
  • 1 cup fresh berries (blueberries, strawberries, raspberries)
  • Fresh mint leaves, a handful, chopped or whole for garnish (optional)

Instructions

  1. Slice the watermelon by cutting off the ends to create a stable base, then slice into 1-inch thick rounds. Cut each round into 6-8 wedges like pizza slices.
  2. In a mixing bowl, beat softened cream cheese with powdered sugar and vanilla extract until smooth and fluffy. Mix in Greek yogurt or sour cream if using.
  3. Spread the cream cheese frosting evenly over each watermelon wedge, about 2 tablespoons per slice.
  4. Scatter fresh berries evenly over the frosted watermelon slices.
  5. Garnish with chopped fresh mint leaves and chill the fruit pizzas in the fridge for 10-15 minutes before serving.

Notes

Use a firm, seedless watermelon for best results. Soften cream cheese to room temperature before mixing. Keep berries dry to avoid sogginess. Chill before serving to keep watermelon crisp. Can substitute dairy-free cream cheese and yogurt for a vegan version.
