A quick and refreshing watermelon pizza topped with colorful fresh fruits and a honey-lime drizzle, perfect for summer snacks and gatherings.

Ingredients

Scale
  • 1 large seedless watermelon, sliced into 1-inch thick rounds
  • 1 cup fresh strawberries, hulled and sliced
  • ½ cup blueberries
  • 1 large kiwi, peeled and thinly sliced
  • 1 cup mango, diced (optional)
  • A handful fresh mint leaves, roughly chopped
  • 2 tablespoons honey or agave syrup
  • 1 tablespoon freshly squeezed lime juice

Instructions

  1. Slice the watermelon by cutting off both ends so it sits flat, then slice into 1-inch thick rounds about 8-10 inches in diameter.
  2. Prepare the fruit toppings by hulling and slicing strawberries, peeling and thinly slicing kiwi, dicing mango, and rinsing blueberries. Keep fruit bite-sized.
  3. Mix the glaze by whisking together honey (or agave syrup) with freshly squeezed lime juice in a small bowl.
  4. Place a watermelon round on a serving platter and gently arrange the mixed fruit toppings on top, layering colors to create a vibrant pattern. Scatter chopped mint leaves over the fruit.
  5. Lightly drizzle the honey-lime glaze over the fruit and watermelon base. Serve immediately for the best freshness.

Notes

Use a firm, ripe watermelon to prevent sogginess. Pat fruit dry after washing to avoid excess moisture. Assemble just before serving for best texture. Optional creamy layer of ricotta or Greek yogurt can be added before toppings for texture contrast. Agave syrup can replace honey for a vegan glaze.
