Fresh Winter Christmas Salad Recipe with Easy Honey Mustard Dressing

A crisp and vibrant winter salad featuring mixed greens, tart apples, pomegranate seeds, toasted nuts, and a tangy honey mustard dressing. Perfect for holiday meals and quick to prepare.

Ingredients

  • 4 cups mixed winter greens (baby kale, spinach, and arugula)
  • 1 medium Granny Smith apple, thinly sliced
  • 1/2 cup pomegranate seeds
  • 1/3 cup toasted pecans or walnuts
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 small red onion, thinly sliced
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • Salt and freshly ground black pepper to taste

Instructions

  1. Toast the nuts in a dry skillet over medium heat for about 5 minutes, stirring frequently until golden and fragrant. Remove from heat and let cool.
  2. Rinse mixed winter greens thoroughly and spin dry or pat with paper towels. Transfer to a large salad bowl.
  3. Core and thinly slice the Granny Smith apple. Thinly slice the red onion. Add both to the salad bowl with the greens.
  4. Sprinkle pomegranate seeds and crumbled feta cheese over the salad.
  5. In a small bowl or jar, combine olive oil, Dijon mustard, honey, apple cider vinegar, salt, and pepper. Whisk or shake vigorously until emulsified.
  6. Pour the honey mustard dressing over the salad and toss gently to coat evenly without bruising the greens.
  7. Sprinkle the cooled toasted nuts on top just before serving to keep their crunch.

Notes

Toast nuts carefully over medium heat to avoid burning. Toss apple slices in lemon juice to prevent browning. Start with half the dressing and add more to taste to avoid overdressing. Prepare dressing and toast nuts ahead of time for convenience.
