  • Carrot sticks (about 1 medium carrot, cut into 3-4 inch sticks)
  • Cucumber slices (about 1/2 medium cucumber, sliced 3-4 inches long and 1/4 inch thick)
  • Bell pepper strips (about 1/2 medium bell pepper)
  • Cherry tomatoes (about 6-8)
  • Mixed greens or baby spinach (about 1 cup)
  • Whole grain crackers or pita chips (optional, about 1 small handful)
  • Olives or pickles (optional, about 6-8 pieces)

Instructions

  1. Wash carrots, cucumbers, and bell peppers thoroughly. Cut them into sticks or slices about 3-4 inches long and roughly 1/4 inch thick. Rinse cherry tomatoes and pat dry. Arrange these in your lunch container’s compartments.
  2. Lay out one turkey breast slice on a clean surface. Spread about 1 teaspoon (5 g) of hummus evenly over the slice, leaving a small border on the edges so it doesn’t ooze out when rolled.
  3. Starting at one end, roll the turkey slice tightly but gently to avoid tearing. Set aside and repeat with the remaining slices. You should get around 6-8 rolls depending on slice size.
  4. Place the turkey rolls in their compartment or arrange them neatly on a bed of mixed greens or baby spinach leaves.
  5. Include a small handful of whole grain crackers or pita chips in another section. Add olives or pickles if using.
  6. Seal the container with its lid and refrigerate if not eating immediately.

Notes

Use low-sodium turkey breast for better health benefits. If hummus is too runny, thicken with tahini or Greek yogurt. Pack wet ingredients like tomatoes separately to avoid sogginess.
