These healthy no-bake granola bars are made with simple ingredients like oats, peanut butter, and honey. Ready in just 5 minutes of prep, they’re chewy, satisfying, and perfect for busy lifestyles.

  • 2 cups (180g) rolled oats
  • 1 cup (240g) creamy peanut butter
  • ½ cup (170g) honey
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ cup (90g) dark chocolate chips
  • ¼ cup (30g) chopped almonds
  • ¼ cup (35g) dried cranberries

Instructions

  1. Line an 8×8-inch baking pan with parchment paper, leaving overhang on two sides.
  2. In a large microwave-safe bowl, combine peanut butter and honey. Microwave for 20-30 seconds until warm and runny. Stir in vanilla extract and salt until smooth.
  3. Add rolled oats to the peanut butter mixture and stir until every oat is coated.
  4. Fold in chocolate chips, chopped almonds, and dried cranberries until evenly distributed.
  5. Transfer the mixture to the lined pan. Press down firmly and evenly using the bottom of a measuring cup or a flat glass until the surface is smooth and level.
  6. Refrigerate for at least 1 hour, preferably 2 hours or overnight, until firm.
  7. Lift the block out using the parchment sling. Place on a cutting board and cut into 12 bars (3 rows by 4 rows) with a sharp knife, wiping the blade clean between cuts.

Notes

For perfectly even bars, mark cutting lines before cutting all the way through. If bars are too hard straight from the fridge, let sit at room temperature for 5 minutes before cutting. Toasted oats add extra flavor. Store in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 3 months.
