Healthy Red White & Blue Yogurt Parfait

A quick and easy parfait layering creamy Greek yogurt, fresh strawberries and blueberries, crunchy granola, and optional honey or maple syrup for a fresh, satisfying breakfast.

Ingredients

  • 2 cups (480 ml) Greek yogurt (plain, full-fat or 2%)
  • 1 cup (150 g) fresh strawberries, hulled and sliced
  • 1 cup (150 g) fresh blueberries, rinsed and patted dry
  • 1 cup (100 g) granola (preferably crunchy with oats and nuts)
  • 2 tablespoons (30 ml) honey or maple syrup (optional)
  • 1 teaspoon (5 ml) vanilla extract
  • 1 tablespoon (12 g) chia seeds (optional)

Instructions

  1. Prep the berries: Rinse strawberries and blueberries under cold water, pat dry, hull and slice strawberries into halves or quarters. Set aside.
  2. Prepare the yogurt mixture: In a mixing bowl, combine Greek yogurt with vanilla extract and honey or maple syrup. Stir gently until smooth but still thick.
  3. Layer the parfait: In serving glasses or bowls, start with a spoonful of yogurt mixture, then add about 1/3 cup (50 g) strawberries, sprinkle a tablespoon of granola. Repeat layers with yogurt, 1/3 cup (50 g) blueberries, granola, and finish with a final dollop of yogurt topped with remaining berries and granola.
  4. Add optional toppings: Sprinkle chia seeds over the top layer if desired.
  5. Serve immediately for fresh crunch or cover and refrigerate up to 2 hours. Add fresh granola before serving if chilled.

Notes

Use thick Greek yogurt for best layering; pat berries dry to avoid sogginess; layer granola between yogurt and berries to keep it crunchy longer; granola can be stored separately if prepping ahead; frozen berries can be used if thawed and drained; dairy-free versions can use coconut or almond yogurt.
