  • 4 boneless, skinless chicken breasts, trimmed and pounded to an even thickness
  • 2 cups fresh spinach, washed and roughly chopped
  • 1 cup artichoke hearts, canned or jarred, drained and chopped
  • 1 cup plain Greek yogurt (non-fat or full-fat)
  • 4 ounces cream cheese, softened
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease your baking dish with cooking spray or oil.
  2. Prepare the chicken breasts by trimming excess fat and pounding them to an even thickness (about ½ inch).
  3. Season the chicken on both sides with salt and pepper, then arrange them in the baking dish in a single layer.
  4. In a large mixing bowl, combine the chopped spinach, artichoke hearts, Greek yogurt, cream cheese, Parmesan cheese, garlic, and a pinch of salt and pepper. Mix until well combined.
  5. Spread the spinach-artichoke mixture evenly over the chicken breasts using a spatula.
  6. Sprinkle the shredded mozzarella cheese evenly over the top of the spinach-artichoke layer.
  7. Cover the baking dish with aluminum foil and bake for 25 minutes.
  8. Remove the foil and bake for another 10–15 minutes, or until the cheese is bubbly and golden brown and the chicken is cooked through (internal temperature should reach 165°F/74°C).
  9. Let the dish rest for 5 minutes before serving.
