  • 1 cup (100g) almond flour
  • 1/2 cup (113g) unsalted butter, softened
  • 1/4 cup (50g) granulated sugar
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • 2 cups (300g) fresh or frozen cherries, pitted and halved
  • 1/4 cup (50g) granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1/2 cup (50g) rolled oats
  • 1/4 cup (50g) brown sugar
  • 1/3 cup (40g) sliced almonds
  • 2 tablespoons (30g) unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish or line it with parchment paper.
  2. In a mixing bowl, combine all-purpose flour, almond flour, softened butter, granulated sugar, almond extract, and salt. Mix until it forms a crumbly dough. Press the dough evenly into the bottom of the prepared baking dish.
  3. In another bowl, toss cherries with granulated sugar, cornstarch, and lemon juice. Mix until cherries are well-coated and cornstarch dissolves. Spread the cherry mixture evenly over the crust.
  4. Combine rolled oats, brown sugar, sliced almonds, and melted butter in a small bowl. Sprinkle this mixture evenly over the cherry filling.
  5. Bake for 40–45 minutes, or until the topping is golden brown and the cherry filling is bubbling around the edges.
  6. Allow the bars to cool completely in the pan before slicing into squares.
